So yesterday I started my daily posts of favorite foods, traditions and helpful hints leading up to Thanksgiving. Yesterday it was the recipe for Brandied Cranberries. Today I want to share a fantastic, easy dessert... Pistachio Chocolate Chip Bundt Cake!

Now I realize that many of you have no idea what a bundt pan is, or if you have one, where it is. This recipe is so delicious you need to go and buy one, or find yours! We used to eat Pistachio Chocolate Chip Cake all the time growing up. Many people asked my mother for the recipe, and I haven't had a piece of it for a couple of years, until my wife, Bonnie made it . It takes about 10 minutes to make, and cooks for 50 minutes.

Pistachio Chocolate Bundt Cake

Ingredients

  • 1 package yellow cake mix
  • 1 package instant pistachio pudding mix
  • 1/2 cup oil
  • 1/2 cup water
  • 4 eggs
  • 2 teaspoons almond extract
  • 1 cup chocolate chips

Method

Mix all ingredients together, putting the chocolate chips in last. Pour in to a greased and floured bundt pan. Bake for 350 degrees for 50 minutes

It can be frosted, but normally we just sprinkled powder sugar over it. It's a very moist and delicious cake!
